eve-ng is currently taking a very long time 10+ minutes to boot from the splash page and is not finding a DHCP IP address like it did before. Prior to the current version of EVE-NG, I was able to boot quickly in vmware workstation player 16 without issues.

It stays like the attached photo for quite a long time before booting. I have no idea what could be causing it up until this point.

It is your LAN issue,
You must use VM ware NAT adapter or check your Home LAN, if it is ok for DHCP.
Note, not all wifi adapters bridged with VM ware are supported.
Best solution is to use VM ware NAT adapter here
