I just do fresh installation eve-ng version 5. after finish installation I cannot login with default credential "root/eve". any change with root password ?

Are you remembering the wrong password in this version. I can still login normally. Don't know where your problem is caused by the error?

You simply did not complete EVE installation.
EVE v5 installation from EVE ISO has 2 parts:
1. ubuntu install
2. after reboot of sirst stage, it is automatically continue to phase 2 EVE innstall.
You stopped after Ubuntu and cannot login of course.

Make sure your server has live internet and resolve DNS, only then you will be able complete EVE installation
