Hi,

Can we install eve-ng community or pro edition in server where Intel Xeon E5-2400 series process is installed.

what will be the use case of E5-2600 and/or E5-2400 series processor for eve-ng VM machines.

Yes you can.
Just make sure if your CPU supports Intel VT-X/EPT feature.
As I know E5 series CPUs all supports it
Just bear in mind that 24XX series cpu are very weak with less cores.
If you do not expect to run heavy labs as SECv5, then you will be fine with 24xx
