I can't run either image (qcow2) with VNC console selected, even icon is not changing from "stop" to "play"
I did a try on 2 separate instances...
please advise

it's not an issue, I deployed EVE VM on other host, did reboots multiple times. When VNC is selected it's not even blinking from stop (square) to play (triangle). When I change to Telnet i seems vm is starting but stopping in a while. I need VNC at least for a first run.
are there any logs I could check live when starting vm-node?
It's not only applies to one vm, I did a check at least with 2 (F5 and NX-OS)
so in summary, same behaviour on 2 separate instances...

if the node is not stopping on the screen, menas EVE system services are screwed, and you cannot stop it.

ok, it seems problem solved.
EVE didn't recognize properly my host, in PVE it must be set to "host"
Now it's working fine.
