After all diagnosis it is hard to find what was the issue with your setup, can you use below script and post the output.

2 gig of memory is to low....
An I5 is not a warrior CPU

Only 2cpu....

I'm having the exact same issue; devices going on and then going off a few or more seconds later.
I didn't have this problem in June, and I haven't been using Eve until today and suddenly, I'm having this problem.
I didn't update nor change anything.
I ditched the old version and installed the latest version today but I'm still stuck with this issue.

I allocated 8 CPUs (2 x 4), 64GB memory and 500GB harddisk space (thick provisioning).
This happens even when I attempt to run 1 instance of IOL.

check the devices, maybe image type change from hda to virtio and that is the reason

Sorry for my limited knowledge of these things, but don't know how I can verify that.
It looks like vIOS runs properly, so I'll use it insead of IOL.

if you have problem only with IOL, you probably have a license issue for IOL or not correct naming.

I didn't change the hostname (eve-ng), so I suppose the license is not the cause of the problem.
In fact, the file /opt/unetlab/addons/iol/bin/iourc exists and I see some license text in it (unl01 = xxxxxxxxx;).

As for naming, it looks fine to me:
